Well that one's pretty. Might do that.

You grow limes, indoors or out?

Excellent! Please share some pics if you give 'er a try :)

Yes we grow a couple lime trees in pots and they have to come inside in the winter.

It can get pretty tight in our living room if I do not heavily prune them (that is where our only viable / substantial south facing window is) but it does make for a nice ambiance when they sometimes bloom mid-winter.

I shared a few pics of one of our lime trees/shrubs in this post https://gavinmounsey.substack.com/p/decembers-delight about 2/3 of the way down.

Dear Gavin, thank you for the recipe. I went to buy your book and it only ships in the United States?

Looks beautiful and sounds delish! I haven’t tried a ferment yet that has cooked ingredients, didn’t know that was a thing—thanks for the new inspiration.

Thanks my friend! Ya I just made that mixing cooked and non-cooked ingredients for fermenting part up as I went.. my thinking was based on unlocking the aromatics of the ingredients for flavor and it worked out well. Though I did a 100% raw version as well (to maximize nutrition) and that was great too, I would just suggest only using the more tender core part of the lemon grass stalk and fermenting longer or the end result can have a rough texture. Flavor is phenomenal either way though :)

The fermented version and the dynamics regarding cooking some ingredients prior to fermenting in one method I used, yes.

The recipe itself is of Balinese origin, though I use some homegrown ingredients in my recipe that are not in traditional versions of this Sambal.

I like to grow lemon grass in containers with other aromatic herbs and place them in pots around where we sit on the balcony to deter mosquitoes. At the end of the year I harvest half of the lemon grass for recipes like this and then I plant some in the garden (heavily mulched) and leave one plant as a backup in the garage incase it is a hard winter. Most years the outside plants survive just find and I get an endless supply of lemon grass and less mosquitoes bothering us as we hang out on the deck bbqing, watching the sunset or firefly viewing.

Looking forward to the fireflies. They love my yard. I had two rosemary plants. The one I brought inside died in spite of my coddling. The one I left in the garage is back outside again. It fared quite well and needed only an occasional drink of my tea.

Maybe I'll grow some lemongrass. My cousin tells me that bunnies don't like Marigolds.

Oh I have bunnies.

They love our yard too. I have noticed over the last couple years that the fireflies particularly like to forage for nectar on our panicle hydrangea tree and bushes during the day time (especially the "Quickfire" and "Pinky Winky" varieties) that have a more open flower structure. I used to think hydrangeas were not a good use of space considering we have a limited property and I am trying to maximize food production but today I was pruning our hydrangea tree and I found two of these https://archive.org/details/mantiseggpods/IMG_3246.JPG on the dead flower heads.

Combine the fact that they attract parasitoid predatory solitary wasps and the butterflies/bumblebees like them, and I have now decided that it is actually a really good use of space to have hydrangeas in our garden.

Not sure about marigolds as a rabbit deterrent. One year we had a jackrabbit that started hanging out in our back yard. He was super confident and would eat a bunch of kale and then lay like a cat on his back suntanning on the deck. I got a real kick outa that :)

That's one bold bunny. I went by the nursery today, not really open but I went in. The lady agreed with my cousin about marigolds. I should have asked if they had lemon grass. I got some OSC marigold seeds at the horsey farm place. I know there is a name for that but I like horsey farm place. I like the horsey farm place. The reason I went there was to see if I could find some thick aluminum wire, which I did indeed find. Going to try another electroculture antenna with no expectations of success whatsoever.
