Oh I'm getting excited for that cookbook! And just in time for the beet season.
I tricked my kids into fighting over beets with something I once thought of marketing as "Can't Be Beets!" I boil them first until I can let them cool and slip off their skins. Then cut up, slather in olive oil and salt, and roast in a slow oven for a very long time, until the edges get black and crispy. I then toss them in a goat cheese salad like you. Unless I start munching them right out of the oven, in which case they go fast.
It's likely this loses some of the nutritional benefits but since you can dye an entire load of laundry with one millimeter of beet, I think there's plenty left to go around. And yes! on beet greens.

Definitely going to plant some in our garden, both colors. Beets are beautiful!
Beets, Radish, Turnips, all awesome vegetables, also survival foods as they grow in wide range of pH soils.
