I will devote two entire days to this wonton adventure.

I'd love to make this Gavin, but I don't have access to all the Ingredients. What I miss about being in the city. I know, you grow them, and maybe I will too eventually.
I have a nice ribeye that needs to be enjoyed today, down to about a cup of chicken stock, so I'll have to cook a chicken first but you have me lusting for wonton.
Well I grow what I can, but I have yet to grow black rice, wild rice, sesame seeds, Szechwan pepper corns, seaweed or wheat. I do strive to buy or trade for those ingredients from sources that cultivate and/or forage for them in a way that gives back to the Earth. I will experiment with using Amaranth seeds to make flour and then make into a wonton dough this winter however (as Amaranth is something I do grow and mill into flour myself).
If you ever try making some variation of this I would love to hear how it goes. :)

I've never made my own flour, although I probably have the equipment.
I expect you can make noodles out of just about anything you can grind into flour. Noodles don't care about gluten, they just need starch. It would be an interesting experiment. Maybe I should grow some amaranth. I have some seeds here. :)
Just started some French Bread that will take me three days to complete, French bread cares about gluten.
